Cook lasagna noodles according to package directions. Drain and rinse with cold water.
In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
Stir in 1.5 cups of marinara sauce, salt, and pepper into the skillet with the beef.
In a medium bowl, combine ricotta cheese, 0.5 cup mozzarella cheese, Parmesan cheese, egg, and parsley. Mix well.
Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
Lay each cooked lasagna noodle flat. Spread a layer of the ricotta cheese mixture onto each noodle. Roll up each noodle tightly.
Place the rolled-up noodles seam-side down in the prepared baking dish.
Pour the remaining marinara sauce over the top of the rolled noodles. Sprinkle with the remaining 0.5 cup mozzarella cheese.
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
Let stand for 5-10 minutes before serving.
Notes
Serve with a side salad and garlic bread for a complete meal.
