  • 10 ounce Mint Chocolate Sandwich Cookies
  • 4 ounce Cream Cheese Softened
  • 12 ounce Dark Chocolate Melting
  • 1 tablespoon Vegetable Oil Optional, for thinning chocolate

Preparation Steps

  • Crush the mint chocolate sandwich cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
  • In a large bowl, combine the cookie crumbs and softened cream cheese. Mix until well combined.
  • Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Chill in the freezer for 30 minutes to firm up.
  • Melt the dark chocolate in a double boiler or microwave, stirring occasionally until smooth. If desired, add the vegetable oil to thin the chocolate.
  • Dip each truffle into the melted chocolate, coating completely. Place them back on the parchment-lined baking sheet.
  • Sprinkle with additional cookie crumbs or mint sprinkles, if desired. Chill in the refrigerator until the chocolate is set.
