Preparation Steps
Crush the mint chocolate sandwich cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
In a large bowl, combine the cookie crumbs and softened cream cheese. Mix until well combined.
Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Chill in the freezer for 30 minutes to firm up.
Melt the dark chocolate in a double boiler or microwave, stirring occasionally until smooth. If desired, add the vegetable oil to thin the chocolate.
Dip each truffle into the melted chocolate, coating completely. Place them back on the parchment-lined baking sheet.
Sprinkle with additional cookie crumbs or mint sprinkles, if desired. Chill in the refrigerator until the chocolate is set.
