  • 4 large tomatoes ripe but firm
  • 1 lb ground beef lean
  • 0.5 cup cooked rice white or brown
  • 0.25 cup chopped onion
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the tomatoes and scoop out the pulp. Save the pulp for another use or discard.
  • In a bowl, combine the ground beef, rice, onion, garlic, parsley, oregano, salt, and pepper.
  • Fill each tomato with the meat mixture.
  • Place the stuffed tomatoes in a baking dish and bake for 45 minutes, or until the tomatoes are tender and the filling is cooked through.

Notes

Serve the stuffed tomatoes hot, garnished with fresh parsley, if desired.
